Making Monday: Croque No No

I was enthralled by Rachel Khoo’s Croque Madame Muffins when I first saw them on her programme about her tiny Paris Kitchen and when my lovely friend made them for a church breakfast, I thought it couldn’t be too hard and I’d have a go myself. Well…. I did. And they were ok. Not terrific. Not out of this world. Not super delicious but just ok. And I felt a bit flat as I had been looking forward to them.
I had followed some advice on Eat, Little Bird and baked my bread for 10 minutes before I added the filling but this only resulted in crisp baskets which were nice but didn’t have the best shape for filling. Then I cracked the egg in and it spilled over the crisp basket and that resulted in a difficult to budge muffin. So basically, if I were to try it again, I’d not do the pre-baking. I’m not sure if I’d try it again as they were a bit meh and not too wow.
I have a knitting update but that’ll have to wait. It’s late and I need to catch some zzzz’s.

I agree about not precooking the bread, those kinds of bread ‘cups’ are quite popular here and they crisp up nicely in the oven. I would have added the cheese to the sauce and I like MORE cheese than she used!! Then Parmesan on top.I might give these a go next week!!
